No opening date has been announced. When Bamboo Sushi signed at The Switchyard in March 2026, the developer said the first tenants were expected to open by the end of the year. As of October 9, 2026, the town still lists it as Coming Soon. We update this page the moment a date is posted.

What Bamboo Sushi actually is
A Portland, Oregon, chain known for sustainable sushi. It sources seafood through the Marine Stewardship Council and the Monterey Bay Aquarium’s Seafood Watch program. Its other restaurants are in Portland, Seattle, Denver, and the Bay Area, so this is its first move into the Phoenix area.
The menu goes beyond rolls: crispy rice, poke bowls, fried rice, steak tataki, crispy garlic tofu, and even a wagyu burger, plus cocktails and sake.
Who it’s opening next to
Bamboo Sushi is part of The Switchyard’s first wave, alongside Snooze, Shake Shack, and Postino. Room and Porch (home goods), Zara Nail Bar, and Edward Jones signed at the same time.
Where the date comes from
The “by year’s end” target is from the developer, Creation, as reported by KTAR in March 2026. Menu and sourcing details are from WhatNow. Coming Soon status is from the town’s new-business list. That target is now seven months old, and a brand-new district like The Switchyard depends on several buildings, permits, and inspections all landing on time, so a 2027 opening wouldn’t be a surprise.
